Mirin Glazed Salmon

Another recipe from Nigella Lawson taken from her book Nigella Express, which can be found on Page 149. I was looking for a meal that could be pulled together quickly and which was quite light and healthy. To build on the success of Delia's Roasted Fish Topped with Sun-Dried Tomato Tapenade I decided it was to be another fish dish. It may surprise you to learn that I am not fond of salmon but I have eaten it before as it is easy to de-bone but I can find the taste a bit overpowering. This recipe seemed a good one as it has a japanese style sauce which I felt would hopefully disguise the taste of the fish.

This was yet another meal that was very easy to prepare, the fish was marinated for about 5 minutes and then flash fried in a dry pan with the marinade added later to make a sticky sauce. i served it with oven roasted potatoes and a salad but I think that rice, as suggested in the recipe, would have been better as it would have soaked up the deliciously sweet and salty sauce. However, it did make a delicious warm salad dressing.

The fish fell apart when taking it out of the pan so I would cook it for a little less the next time but other than that it was delicious. The sauce was strong and tasty, but if you were a real salmon lover you may find it over-powers the flavour of the fish but we loved it. Mike was particularly ecstatic and is looking forward to trying it again. Another success for the delectable Ms Lawson - maybe I should try and elbow myself in to her circle of luncheon friends after all!!
